Gluten free ginger cupcakes are not yucky!
Lately we're strugling with the sweets intake in our diets. The kids constantly get offerd icecream, candys, cake, chocolate, biscuits, ...etc.
I would like to teach them about a healthy diet, but it is really difficult to offer them something sweet and healthy. Okey, there are the ussual suspects: smoothe, pancakes, strawberries with vanilla icecream, apple strudel....an then you slowly ran out off options.
So Borut went on a mission to find some healthy recipes and even a heathy replacemnet for a birthday cake. And ... (drumroll please)... he found it!
Here is a super simple recipe for apple ginger cupcakes with raspberry topping.The kids made them themselves, they loved the taste and I sleep better now, knowing that good and healthy sweets exist, you just have to make them at home.
Apple ginger muffns
(from the book by Great british chefs)We used this recipe, we only exchanged the white flour with the gluten free one and slightly lowered the amount of sugar.
Raspberry topping:- 500g mascarpone- fresh raspberries- date syrup
First you smash raspberies with a fork and than mix them gently in mascarpone cheese. You add a little date syrup for sweetness and it is done. And btw. very yummy :-)
